Lemonade can be just as refreshing in the cooler months as in the summer, so don’t hesitate to make this super delicious (and easy) sparkling blueberry lemonade. This isn’t your average lemonade. We’re adding a burst of juicy blueberries and a fizzy kick to create a drink that’s not only delicious but also packed with antioxidants.

Ingredient List

  • Fresh (or frozen) blueberries
  • Lemons
  • Sugar
  • Water
  • Sparkling water

Zest one of the lemons for the blueberry simple syrup. The lemon zest brings a vibrant flavor to the lemonade beyond the simple tartness of lemon juice. Trust me, you don’t want to skip this part!

Bring the simple syrup to a boil then lower the temperature and let it simmer for 10 minutes. Those blueberries will soften and burst leaving a thick, sweet, and juicy syrup.

I like to reduce waste, so I try to find uses for recipe scraps. I use the leftover blueberries from the simple syrup in yogurt parfaits or oatmeal.

Enjoy it like this or make it boozy by adding your favorite vodka or gin. Cheers!

Sparkling Blueberry Lemonade

Sparkling Blueberry Lemonade

Ingredients
  

  • 2/3 cp. Sugar
  • 2/3 cp. Water
  • 1-1 1/2 cp. Blueberries ideally they should be fresh but frozen is ok.
  • 1 tsp. Lemon zest
  • 1 cp. Lemon juice from 4-5 lemons
  • 3 cp. Sparkling water

Instructions
 

  • Combine the sugar, water, bluberries, and lemon zest in a medium pot.
  • Bring to a boil then lower the temperature and let simmer for 10 minutes until the sugar is melted and blueberries start to get saucy.
  • Remove from heat and let cool before passing through a fine strainer or cheesecloth. Set aside.
  • In a large pitcher, add the blueberry syrup and lemon juice and stir.
  • Add ice cubes and sparkling water. Garnish with fresh blueberries and lemon slices.
  • Enjoy!

Notes

  • Only add the ice and sparkling water when you’re ready to serve the lemonade so that the lemonade doesn’t become watered down and flat.  For the same reason, if you aren’t going to finish the whole drink, pour the ice and sparkling water in glasses, then pour in the blueberry lemonade.
  • Make it boozy with a bit of your favorite vodka or gin. 
  • Blueberries not in season? Use frozen blueberries. 
  • Muddle fresh mint or basil leaves for an extra layer of flavor.
